Summer-soup by Chef Thomas Höfler

Ingredients for 6 guests

  • 1 medium sized water melon
  • 150 ml red port wine
  • wine seed oil
  • black pepper
  • Fleur de Sel
  • fresh basil
  • Vulcano ham in thin slices



Peel and cut the water melon, prepare small sticks for decoration. Put the rest of the water melon in a blender and blend it together with the port wine, strain everything, add black pepper and Fleur de Sel, let it cool. Put the water melon sticks together with some wine seed oil, black pepper and Fleur de Sel in a plate, add Vulcano ham and pour in the soup. Add a few leaves of basil and enjoy.
