Recipe: Chilli sauce

Chef Andreas Mahl from the Landhaus zu Appesbach has penned the recipe for his special chillisauce exclusively for Tauroa visitors. Wishing you the best of luck and bon appetit!


  • 1 kg of red pepperoni
  • 250 g red onion
  • 50 g garlic
  • Juice of a lime
  • 250 g fish sauce
  • 100 ml soy sauce
  • 100 ml rice vinegar
  • 200 g sugar
  • 100 ml olive oil
  • 100 ml table oil


Mince the pepperoni, onion and garlic and sear the pureed mass in a large pot until it turns dark. Add the sugar and reduce.
When the sugar is nicely caramelized add the soy sauce, the vinegar and the fish sauce. Add the oils and lime juice and reduce with constant stirring.
